Ingredients

  • 2 packs instant ramen noodles, seasoning packets discarded
  • 2 cups chicken broth or vegetable broth
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp white pepper
  • 1/4 cup grated parmesan cheese
  • 2 soft boiled eggs, halved
  • 2 green onions, sliced
  • 1 tsp toasted sesame seeds

Equipment

  • Medium pot
  • Fork
  • Small bowl for ice bath

Method

  1. Melt butter in a medium pot over medium heat. Add garlic and cook for 30 seconds until fragrant.
  2. Pour in the broth and bring to a gentle simmer.
  3. Stir in heavy cream, soy sauce, sesame oil, and white pepper. Simmer for 2 minutes.
  4. Add the ramen noodles directly into the broth, breaking them apart gently.
  5. Cook for 3 to 4 minutes until noodles are tender.
  6. Stir in parmesan cheese over low heat until melted and the sauce thickens slightly.
  7. Top with halved soft boiled egg, green onions, and sesame seeds before serving.

Notes

  • Keep the sauce at a gentle simmer once cream is added to prevent separating.
  • Boil eggs for exactly 6 and a half minutes for a soft, jammy yolk.
  • Reheat leftovers with a splash of broth or milk to loosen the sauce.
