Mix parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a small bowl.
Sprinkle the cheese mixture over the oiled potatoes and toss to coat all sides.
Arrange wedges on baking sheet in a single layer, skin side down.
Bake for 35-40 minutes, flipping halfway through, until golden brown and fork-tender.
Cool for 2-3 minutes before serving. Garnish with fresh parsley if desired.
